RICE FLOWER OF CALASPARRA

Rice with chicken

400 grs. of rice Flower of Calasparra
1 chicken
1 mature tomato
1 red pepper
Olive oil
Water, salt, parsley and saffron.



We cleaned, trozeamos the chicken and the we cook slightly. Later we put it to cook until the meat this tender one, (about 25 minutes approx.)

In a frying pan sofeímos the rallado tomato and we added to him little and of pimentón worn out. We along with added to all the sofrito to the paella pan the chicken already cooked using the broth where we have cooked it until obtain 3 parts of broth by one of rice.

We put it to cook in the strong fire paella pan during 15 minutes, we added the salt, the parsley and saffron to him.

While cook in a small frying pan strips of red pepper that we will add to the paella when this separating from the fire.

After the 15 minutes we lowered the fire and we maintain it low during 5 minutes more, extinguished and fire and we let rest the rice during 10 minutes, preferably covered

400 grs. of rice Bomba Flower of Calasparra.
4 artichokes.
100 gr.. of mushroom
100 gr.. of beans green
1 mature tomato
1 red pepper
Olive oil.
Broth of bird
Saffron, salt and pimentón.

We cleaned, trozeamos and cook in a frying pan with olive oil all the vegetables expect the red pepper that we will fry it, we will reserve and the añadirmos to it to the paella when this finishing.

In that oil cood the rallado tomato and we added a little to him pimentón sweet.

We added everything to the paella and we put the broth to him of bird or in its defect prepared water. When the broth breaks to boil we added the rice (remembers 4 parts of broth by one of arroz).Lo we will let boil to strong fire during 12 minutes, and 5 minutes to untimed fire.

We separated the paella and we let it rest covered during 10 minutes.

1KG OF ROCK FISH
2 NATIONAL CALAMARIES
200 GRS OF BARE WHITE PRAWN
2 NORAS
3 TEETH OF GARLIC.
OLIVE OIL
1 FRIED MATURE TOMATO.
SALT And SAFFRON.

The rock sin cooks in a great pot during 2 hours approx. one strains that broth and reserve.

In olive oil sofrie the ñoras and garlic and lie down to a mortar, sour and they are reserved, in that oil sofrie the clean and divided calamary.

Calamaries turns upside down in the paella, the fried tomato, the crushed ñoras and garlic and the broth of the fish, and the rice, (it remembers 4 parts of broth by 1 of rice.) , one adds to salt and saffron to him and it puts to cook to strong fire during 12 mintuos, and to untimed fire during 5 minutes more, the paella pan separates and it is let rest during 10 minutes preferably covered.

Advice: THE SUCCESS OF A PAELLA DOES NOT RESIDE IN THE AMOUNT OF INGREDIENTS BUT IN THE QUALITY.
Rice whith milk

250 grs of rice Flower of Calasparra
1 liter of milk.
250 grs. of sugar.
Cinnamon in branch.
Dust cinnamon.
The crust of a lemon.


Milk is put to boil with the crust of lemon and the cinnamon in branch.

When it breaks to boil continuously gets up the rice removing to untimed fire during 20 minutes, then the sugar is gotten up to him and it is let boil during other 8 or 10 minutes.

The worn out cinnamon uses to cold dusting to the taste.
